This Chilli Beef Stew is a rich and satisfying high-protein meal made with lean minced beef, black beans and plenty of vegetables in a spicy tomato sauce.
Black beans provide additional plant protein and fibre, while red pepper, tomatoes and onion add flavour and nutrients. Wholegrain pasta provides slow-release carbohydrates, making this a substantial meal that's particularly suitable for active days or meal prep.
Olives add a salty Mediterranean-style finish that works surprisingly well with the rich chilli and tomato flavours.

Eat breakfast no later than half an hour after waking up.
- Bring a saucepan of lightly salted water to the boil.
- Add 60 g dry wholegrain pasta and cook according to the packet instructions until al dente. Drain and set aside.
- Heat a large non-stick frying pan over medium-high heat and lightly coat it with cooking spray.
- Add 150 g lean minced beef and cook for approximately 5–6 minutes, breaking it apart with a wooden spoon until browned.
- Add 15 g chopped onion and 100 g diced red pepper. Cook for another 3–4 minutes until they begin to soften.
- Add smoked paprika, cumin, chilli and garlic powder.
- Stir for around 30 seconds before adding 200 g canned tomatoes.
- Reduce the heat and simmer for approximately 8–10 minutes, allowing the sauce to thicken.
- Drain and rinse 250 g black beans and stir them into the beef mixture with 60 g pitted olives.
- Simmer for another 3–5 minutes until everything is piping hot.
- Stir the cooked pasta directly into the chilli or serve it alongside.
- Season with salt and black pepper and finish with fresh parsley or coriander.
